- 1 lb chicken breast boneless, skinless, cut into nugget-sized pieces
- 1 cup cornflakes crushed
- 2 eggs beaten
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika optional
- Cooking spray or oil
Preheat the oven to 400°F and line a baking sheet with parchment paper or foil.
Cut the chicken into bite-sized pieces and set aside.
In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, mix the crushed cornflakes with salt, pepper, and paprika.
Dredge each chicken piece in flour, dip it in the egg, then coat it in the cornflake mixture, pressing lightly to adhere.
Arrange the coated nuggets on the prepared baking sheet and lightly spray them with cooking oil.
Bake for 18 to 20 minutes, flipping halfway through, until golden and fully cooked with an internal temperature of 165°F.
Serve warm with your favorite dipping sauces or sides.
Storage: Store in an airtight container in the fridge for up to 3 days.
Reheating: Reheat in the oven or air fryer at 375°F until crispy again.
Top Tips: Crush cornflakes finely for better coating. Don’t overcrowd the baking sheet to ensure even crisping. Add seasonings to the coating to suit your taste.
