Ingredients

  • 1 lb chicken breast boneless, skinless, cut into nugget-sized pieces
  • 1 cup cornflakes crushed
  • 2 eggs beaten
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika optional
  • Cooking spray or oil

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper or foil.
  • Cut the chicken into bite-sized pieces and set aside.
  • In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, mix the crushed cornflakes with salt, pepper, and paprika.
  • Dredge each chicken piece in flour, dip it in the egg, then coat it in the cornflake mixture, pressing lightly to adhere.
  • Arrange the coated nuggets on the prepared baking sheet and lightly spray them with cooking oil.
  • Bake for 18 to 20 minutes, flipping halfway through, until golden and fully cooked with an internal temperature of 165°F.
  • Serve warm with your favorite dipping sauces or sides.

Notes

Storage: Store in an airtight container in the fridge for up to 3 days.
Reheating: Reheat in the oven or air fryer at 375°F until crispy again.
Top Tips: Crush cornflakes finely for better coating. Don’t overcrowd the baking sheet to ensure even crisping. Add seasonings to the coating to suit your taste.
