- 4 cod fillets about 5 oz each
- 1½ cups cherry tomatoes halved
- ½ cup pitted Kalamata olives sliced
- 2 cloves garlic minced
- 2 tablespoons olive oil
- juice of ½ lemon
- 1 teaspoon dried oregano
- salt and black pepper to taste
- 2 tablespoons fresh parsley chopped (optional for garnish)
Preheat the oven to 400°F (200°C).
In a bowl, combine cherry tomatoes, olives, garlic, olive oil, lemon juice, oregano, salt, and pepper.
Place the cod fillets in a baking dish and spoon the tomato-olive mixture over the top.
Bake for 12–15 minutes, or until the cod flakes easily with a fork.
Garnish with chopped parsley and serve with couscous or a green salad.
Storage: Refrigerate leftovers in an airtight container for up to 2 days.
Reheating: Warm gently in the oven or microwave with a splash of lemon juice or water to prevent dryness.
