- 12 oz smoked sausage sliced
- 1 15 oz can brown lentils drained and rinsed
- 1 yellow onion diced
- 2 carrots peeled and sliced
- 2 celery stalks sliced
- 2 garlic cloves minced
- 1 14.5 oz can diced tomatoes
- 3 cups chicken or vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme or Italian seasoning
- salt and pepper to taste
Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery; cook for 5–6 minutes until softened.
Stir in garlic and seasoning, cooking for 1 more minute.
Add the sliced sausage, lentils, tomatoes, and broth. Stir everything together.
Bring to a simmer and cook uncovered for 10–15 minutes until heated through.
Season with salt and pepper to taste. Serve hot, optionally with crusty bread.
Storage: Refrigerate leftovers for up to 3 days in an airtight container.
Reheating: Warm gently in a pot or microwave. Add a splash of broth or water if too thick.
