Ingredients

  • 12 oz smoked sausage sliced
  • 1 15 oz can brown lentils drained and rinsed
  • 1 yellow onion diced
  • 2 carrots peeled and sliced
  • 2 celery stalks sliced
  • 2 garlic cloves minced
  • 1 14.5 oz can diced tomatoes
  • 3 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme or Italian seasoning
  • salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery; cook for 5–6 minutes until softened.
  • Stir in garlic and seasoning, cooking for 1 more minute.
  • Add the sliced sausage, lentils, tomatoes, and broth. Stir everything together.
  • Bring to a simmer and cook uncovered for 10–15 minutes until heated through.
  • Season with salt and pepper to taste. Serve hot, optionally with crusty bread.

Notes

Storage: Refrigerate leftovers for up to 3 days in an airtight container.
Reheating: Warm gently in a pot or microwave. Add a splash of broth or water if too thick.
